AN UNFORGETTABLE DINNER AT CANLIS


Some experiences are far too significant to be relegated to a fleeting Instagram story. They deserve to be savored, recounted, and shared in full. This is one of those stories.


Since getting married, my husband has inspired me to be far more adventurous with my palate. We have been fortunate enough to dine across the globe, from tucked-away "hole-in-the-wall" gems to world-class Michelin-starred establishments in the most vibrant cities of the US and Europe. Yet, even with those incredible memories, nothing quite compared to the extraordinary evening we experienced at Canlis Restaurant in Seattle.


Over the last few years, I’ve had the pleasure of befriending one of the kindest souls you could ever meet: the remarkably talented designer and businesswoman, Lydia Huffman. Lydia is living proof that business can be conducted with warmth, that positivity is truly contagious, and that work becomes a joy when shared with people you admire. She has a wonderful way of reframing life; if you ever share a "sob story" with her, she’ll simply smile and say, "And that will be your story as long as you tell it". Since hearing that, I’ve tucked my own grievances away in the deep archives of my mind, never letting them see the light of day again. She is truly an inspiration.


The beautiful Lydia also happens to be the mother of the youngest Executive Chef in Canlis history, Chef James. To celebrate our friendship and introduce our families to one another, Lydia invited us to this magical Seattle landmark. As it turns out, talent runs deep in the Huffman family. Chef James introduced us to the finest oyster we have ever tasted, but the true revelation was the team culture he has fostered. While I had heard of Canlis many times, renowned for its creative events, breathtaking views of Seattle, and legendary cuisine, I didn’t realize what a hidden gem it was in terms of its hospitality philosophy.


There is an authentic fire in the hearts of the staff that simply cannot be faked. You see it in the way they serve every plate and the meticulous attention they pay to how a dish looks and, more importantly, how it makes you feel. Beyond the exquisitely plated courses, the orchestrated service, and the handcrafted cocktails, we were honored with a behind-the-scenes tour.


The kitchen was a marvel, crystal clean and impeccably organized, staffed by a team that is clearly proud of their craft. Each person we met was an expert in their own right, armed with the kind of knowledge that allows Canlis to bring guests into the present moment, one bite at a time.

Sometimes a simple "thank you" feels inadequate, and that is exactly how I felt after this gathering. I hope my story encourages you to treat yourself to an evening at Canlis to experience the creations of Chef James, one of the most humble and gifted chefs I’ve ever known.
